Vitamin E is a fat-soluble vitamin that is absorbed from the small intestine along with fats. It acts as an antioxidant, ie it blocks the oxidizing effect of harmful radicals on the fatty acids in cells and cell membranes. Thus, the need for vitamin E increases at the same time as the demand for unsaturated fatty acids, i.e. the so-called the proportion of hard fat in the diet increases. Vitamin E also protects carotenoids, or vitamin A, from breakdown.
